Don't you just hate it when you're looking forward to eating some freshly made mozzarella cheese, but found that it's been ruined after storing it in the fridge?
The problem with this cheese is that you can't leave out too long without it crumbling, but you can't refrigerate either without it drying out and becoming rubbery (ew!)
But before you chuck the whole batch out, Serious Eats says you can still rescue the cheese. Just soak it in warm, salted milk for an hour and it'll taste just like new. It's worth the shot, since nobody likes to waste delicious cheese.
