Heat has a lot of effects on water, sometimes making it "dance" quite a bit. The Leidenfrost effect is water droplet's outer layer vaporizing before boiling away. It produces an insulating effect that can cause it skitter across a hot surface.

The Mythbusters conduct an experiment called the Leidenfrost Maze to show you all the neat tricks that can be done.
